In the industry of winemaking, we live close to the miraculous reality of nature every day. We know firsthand just how much we depend on the great miracle of the natural cycles that we all so often take for granted. In the words of Wendell Berry: “The miraculous is not extraordinary, but the common mode of existence. It is our daily bread. Whoever really has considered the lilies of the field or the birds of the air, and pondered the improbability of their existence in this warm world within the cold and empty stellar distances, will hardly balk at the turning of water into wine—which was, after all, a very small miracle. We forget the greater and still continuing miracle by which water (with soil and sunlight) is turned into grapes.” Yet the balance on which this common mode of existence depends is changing, and rather than being stewards of the earth that sustain us, we use it and abuse it. But the earth speaks to us in the language of wind, floods, draughts and storms, in the language of fire. This what we have felt as we’ve watched the wildfire seasons in our beloved California worsen year after year.

Though small, our Brut Nature is the way in which we try to give back and raise awareness. This sparkling wine is the result of a collaborative project that has been over two years in the making. The grapes were grown by California’s Georgetown Ranch, and carefully fermented with low intervention twice by our team here at The Wine Collective. The artwork was made by California artist James Coffman, and the label design by our very own Poesis Creative. And we donate $5 from every bottle sold to Direct Relief California, an organization that works tirelessly to aid those affected by the fires year after year. We do all this in the hope of sharing with our community the truth about the deep bond that exists between the two coasts in agriculture and the environment in general. We do this with the hope of raising awareness about just how connected our environment is and how much we depend on its health and balance.

As a wine, there are many exciting things about this bubbly. It is a “Blanc de Noirs,” meaning it was made from 100% Pinot Noir grapes directly pressed into very light pink, almost white juice (that smells of spring flowers and strawberries), which we then carefully fermented it twice—first in stainless steel and second in bottle (a.k.a méthode Champenoise)—and aged it on the lees for over a year (which adds the bready, pastry-like body that is the stamp of good champagne). It is a Brut Nature, so it has the lowest levels of sugar in the sparkling world, with under 3 grams per liter (which doesn’t hide the crisp acidity of its finish that entices the next sip). The result is a bubbly that, as a wine, is nothing short of exceptional.

Yet we hope that this wine doesn’t just quench the perpetual thirst for good bubbles that we all have. But that it lights a fire in everyone’s heart, a fire that wakes us from the slumber of our comfort to realize just how much we owe to the earth that has given us everything and that continues to do so every day. We hope that it reminds us of the importance of being consequential with our daily choices, so that those choices are regenerative and life-giving, so that we are not part of the machine of use and abuse, but part of the miraculous mode of existence on which we depend. We hope that, as we raise our glass of bubbles on this new year, we not only enjoy but care and do.
